Which mayonnaise should you choose for the holidays? Or maybe make your own?

Easter is just a few days away.

All the CHEFS IN THEIR OWN KITCHENS are starting to think about what will end up on the holiday table.

In Poland, as we know, MAYONNAISE is a traditional addition to eggs, salads, sausages, and sandwiches. 

And today, a few words about him:

- what ingredients should good mayonnaise have;

- what kind of mayonnaise to buy;

- how to make your own HOME-MADE MAYONNAISE.

Although it is not a diet product, I personally cannot imagine Easter without it, even in the slightest. What are we talking about today?

About the promised MAYONNAISE! 
When Christmas comes around, I love to use one that has very good ingredients...
Well, what is it?

The ingredients that should be included in this spread are: eggs, vegetable oil, mustard, lemon juice/white vinegar, a pinch of sugar, and salt. These are the ingredients that should appear on the label if you want to buy good quality mayonnaise.


And how does it look in reality?


I took a closer look at the three most frequently purchased mayonnaises by Poles. They are:
1. WINIARY DECORATIVE MAYONNAISE
2. PEGAZ DELICATESSEN MAYONNAISE
3. KIELECKI MAYONNAISE

  1. When reading the label on WINIARY mayonnaise, the beginning seems encouraging, but the further you read, the worse it gets. The spread contains: rapeseed oil, egg yolk, vinegar, mustard (water, mustard seeds, vinegar, salt, sugar, spices, flavoring), sugar, salt, spices, antioxidant (E385), acidity regulator (citric acid E330).
    Antioxidant E385, or calcium disodium ethylenediaminetetraacetic acid, is not a carcinogenic substance, but when consumed in excessive amounts, it can cause vomiting, diarrhea, and slowed absorption of minerals such as iron.

If it weren't for that antioxidant and the unnecessary addition of an acidity regulator, it wouldn't be so bad.

Let's look at the next item, maybe it will be better.

  1. PEGAZ mayonnaise contains: rapeseed oil, water, vinegar, powdered egg yolk, sugar, salt, mustard, spices, antioxidant E385. Once again, we see calcium disodium ethylenediaminetetraacetic acid, and worse still, powdered eggs! Absolutely unacceptable! We say a firm NO to this mayonnaise!

  1. I will reveal right away that this spread is THE BEST of all those listed. KIELECKI mayonnaise wins this ranking without a doubt. Its ingredients are: rapeseed oil, mustard (water, vinegar, mustard seeds, sugar, salt, spices), water, chicken egg yolks, i.e. everything that real traditional mayonnaise contains. No artificial preservatives or antioxidants. 

I can recommend it to you for Christmas with a clear conscience.

There is another very good mayonnaise called POLONIAK, but it is difficult to find in stores and supermarkets.

However, remember that mayonnaise is a high-fat and high-energy spread. 100 g of this spread contains about 700 kcal, including 76 g of fat. THAT'S A LOT! That's why it's not worth overdoing it. The best solution for Christmas is to mix it with yogurt. In my kitchen, I use this combination in a 1:1 ratio. The dish does not lose its traditional flavor, and it is healthier and slightly lighter.

However, if you want to try making HOME-MADE MAYONNAISE, here is the recipe:

Ingredients:
  • 2 medium egg yolks
  • 1.5 cups of rapeseed oil - 375 ml
  • 1 teaspoon mustard (Dijon is my favorite)
  • 1 tablespoon of lemon juice/white vinegar
  • a level teaspoon of fine sugar or powdered sugar
  • 1/4 level teaspoon of salt

It is important that all ingredients are at room temperature.

Preparation:
  • Place the egg yolks, a teaspoon of mustard, and lemon juice in a small saucepan. Mix everything with a spoon until the ingredients are combined.
  • Add sugar and ¼ teaspoon of salt, stir gently again;
  • At the very end, gradually add the oil in a thin stream, mixing continuously (preferably with a blender, keeping the blades pointing downwards at all times). 
  • After a few minutes, the mayonnaise is ready 😊.
