
- 2 large oranges
- 3 eggs
- 60 ml maple syrup or honey
- 50 ml rapeseed oil
- 1 teaspoon vanilla extract
- 250 g almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- A pinch of salt
- Zest of 1 orange
• Topping: almond flakes (1 tablespoon) and chopped pistachios (1 tablespoon)
• Topping: juice from half an orange + 1 tablespoon maple syrup
First, wash the oranges thoroughly. Pour boiling water over one of them and grate the peel. Peel both oranges and remove the white, bitter part. Cut or blend the flesh into a smooth purée. Next, prepare the mixture. In a large bowl, combine the eggs, maple syrup or honey, oil, and vanilla. Add the orange purée and mix thoroughly. In a separate bowl, mix together the almond flour, baking powder, baking soda, salt, and zest of 1 orange. Then combine the dry and wet mixtures, stirring just until the ingredients are combined. If the batter is too thick, add 1-2 tablespoons of orange juice. Preheat the oven to 170°C (top and bottom heat). Line a cake pan with parchment paper. Pour in the batter, smooth it out, and optionally sprinkle with almond flakes and chopped pistachios. Arrange the orange slices on top and bake for 45-55 minutes, until the top is golden brown. After removing from the oven, you can pour the glaze over the cake (mix orange juice with 1 tablespoon of maple syrup).
