Bowl with roasted sweet potatoes and chicken

A delicious and vitamin-packed bowl with roasted sweet potatoes, chicken, and vegetables. A quick, easy, and tasty dish. Perfect for lunch at work or dinner.

Ingredients:

- 1/3 sweet potato (75g)

- 1/3 chicken breast (70g)

- 1/4 carrot (12g)

- A handful of chopped Chinese cabbage (60g)

- 1/3 cucumber (60g)

- 8 cherry tomatoes (100g)

- 1 teaspoon of black cumin (5g)

- 4-5 sprigs of parsley

- 2 teaspoons of olive oil (10g)

- 1 teaspoon soy sauce (5g)

- 2 pinches of salt

- 2 pinches of black pepper

- 1 pinch of paprika

Preparation:

Cut the sweet potato into cubes and mix with a teaspoon of olive oil, a pinch of salt, pepper, and paprika. Spread them on a baking tray lined with baking paper and bake in an oven preheated to 200°C (top and bottom heat) for about 20 minutes, until they are lightly browned and soft (you can also bake them in an air fryer). Wash the cucumber and dice it. Wash the cherry tomatoes and cut them in half. Finely chop the Chinese cabbage. Grate the carrots using the thickest grater. Cut the chicken into strips and fry in a teaspoon of olive oil, season with salt and pepper, and when ready, sprinkle with a teaspoon of soy sauce and a teaspoon of nigella seeds. Place the baked sweet potatoes, sliced cucumber and cherry tomatoes, Chinese cabbage, grated carrots, and fried chicken in a deep bowl. Finally, add 4-5 sprigs of parsley.
