Whole-grain yeast rolls with mozzarella, pesto, spinach, and cherry tomatoes

Fluffy, whole-grain bread, aromatic pesto, delicate mozzarella, fresh spinach, and juicy cherry tomatoes. They’re a great alternative to classic sandwiches and are perfect for breakfast, lunch at work, or as a post-workout snack. They taste best when still slightly warm, when the mozzarella melts nicely and the pesto gives the whole dish an intense, herbaceous aroma.

Ingredients for two rolls:

Dough:

65 g whole-grain flour (1/2 cup)

35 g wheat flour (1/4 cup)

5 g fresh yeast

50 ml of warm water

1 teaspoon of olive oil

A pinch of salt

Filling:

- 20 g grated mozzarella (2 tablespoons)

- 2 teaspoons of green pesto (about 20 g)

- A handful of fresh spinach

- 80 g cherry tomatoes (about 4)

- A pinch of oregano or basil

- 4 basil leaves (for garnish)

Preparation:

Mix the yeast with warm water and a teaspoon of flour. Let it sit for 5–10 minutes. Add the remaining flour, salt, and olive oil. Knead into a smooth, elastic dough and let it rise, covered, for about 45–60 minutes. Cut the cherry tomatoes into smaller pieces and chop the spinach. Divide the risen dough into 2 portions. Gently flatten each portion, spread with pesto, and top with mozzarella, spinach, and cherry tomatoes. Sprinkle with a pinch of oregano or basil. Let rest for another 15 minutes. Bake at 190°C (top and bottom heat) for about 20–25 minutes, until the rolls are golden brown. Top each baked roll with two basil leaves (optional—for decoration).
