Turkey stew with rice

Sometimes the simplest dishes taste the best—especially when they combine tender meat and aromatic sauce. This light turkey and rice stew is a nutritious meal that is filling and perfect as a simple and quick dinner.

Ingredients:

- 1/2 bag of rice (50g)

- 120g turkey breast

- 1/2 onion (50g)

- 1/2 red bell pepper (115g)

- 1 carrot (45g)

- 1 teaspoon of olive oil (5g)

- 1/2 cup tomato puree (120g)

- 1 clove of garlic (3g)

+ spices: salt, pepper, Provençal herbs, sweet/hot paprika

Preparation:

Cook the rice according to the instructions on the package. Dice the turkey, season with salt, pepper, and sweet/hot paprika. Heat the olive oil in a frying pan and fry the meat for 3-4 minutes. Then add the chopped onion, garlic, paprika, and grated carrot. Fry for another 3 minutes. Pour in the tomato puree (if the sauce is too thick, add a little water), season with Provencal herbs and simmer, covered, for 10 minutes, until the meat and vegetables are tender. Serve with cooked rice.
