Single-serving FIT cold cheesecake

Prepare a delicious cold cheesecake that is perfect for hot days!
The holidays are a good time to reach for recipes that will cool us down a little, and at the same time be delicious, healthy, and... SWEET :). Today's recipe is for a SINGLE-SERVING FIT COLD CHEESECAKE.

INGREDIENTS:

- 150 g low-fat cottage cheese

- 100 g natural skyr

- 10 g vanilla protein supplement (optional)

- 4-5 g gelatin

- 40 ml boiling water

- 20 g erythritol

- 50 g blueberries

- 30 g raspberries

* Of course, you can add other fruits, such as strawberries, blueberries, or blackberries.

PREPARATION:

Dissolve the gelatin in boiling water and set aside. Mix the cottage cheese with skyr, protein supplement, and erythritol. Blend until smooth. Add the gelatin and mix/blend. Pour into a glass dish, arrange the fruit on top, and place in the refrigerator. After 2 hours, the cheesecake should be ready.
