
- 100 g ground beef
- 1 egg yolk (the egg white can be used for omelets or pancakes)
- 1/4 onion (25g)
- 1 pickled cucumber (40g)
- a few pickled mushrooms (e.g., button mushrooms, bay boletes) (40g)
- 1 teaspoon of olive oil (5g)
-1 teaspoon mustard (5g)
Spices: a pinch of Himalayan salt, 2 pinches of black pepper (preferably freshly ground)
Finely chop the onion, mushrooms, and cucumber. Then put the ground beef in a bowl and season with a pinch of salt, pepper, and a teaspoon of mustard. Mix everything thoroughly and transfer to the center of the plate. Make a small indentation in the center of the meat and place the egg yolk there, then season again. Arrange the onion, mushrooms, and cucumber on the plate next to the meat and finally drizzle everything with olive oil.
