Oat Omelet with Parma Ham, Spinach, and Avocado

Ingredients:

For the omelet:

- 2 eggs (110 g)

- 3 tablespoons of rolled oats (30 g)

- 1 teaspoon of chia seeds (5 g)

- 2 tablespoons of water (30 ml)

- a pinch of salt and pepper

Extras:

- 2 slices of Parma ham (20 g)

- 2 large handfuls of fresh spinach (70 g)

- 1/2 clove of garlic (2.5 g)

- 1/4 of a medium avocado (40 g)

- 8 cherry tomatoes (120 g)

- 1 teaspoon of olive oil (5 g)

Preparation:

Wash the spinach and cherry tomatoes. Cut the tomatoes in half, slice the avocado, and finely chop the garlic. Blend the eggs with the rolled oats, chia seeds, water, and a pinch of salt and pepper. Heat a skillet and drizzle it with olive oil. Add the garlic and spinach and sauté for 1–2 minutes, until wilted. Transfer to a plate. In the same skillet, pour in the omelet mixture and cook over medium heat for about 2–3 minutes (covered). Gently flip it over and cook for another 1–2 minutes on the other side. Transfer the omelet to a plate, top it with the wilted spinach, slices of Parma ham, avocado, and cherry tomatoes. Serve immediately, optionally seasoned with freshly ground pepper.
