Millet Pudding with Skyr and Fruit

Ingredients:

- 50 g millet

- 200 ml of 1.5% milk

- 50 g natural skyr

- A handful of fresh raspberries/blueberries/berries

- A handful of fresh strawberries

- A few fresh mint leaves

Preparation:

Rinse the millet thoroughly under running water, then pour boiling water over it to remove any bitterness. Cook the millet in milk over low heat for about 15–20 minutes, until it is soft and has absorbed most of the milk. Once it has cooled slightly, blend the millet into a smooth, creamy pudding. If the mixture is too thick, add a little more milk. Transfer the pudding to a bowl or glass and let it cool. Spread plain skyr on top, add sliced fresh fruit, and garnish with mint leaves.
