
Need to warm up on cold autumn days? You must try this super warming ramen with duck, shiitake mushrooms, and egg. It may not be a quick meal, but it's worth making (preferably for 2-3 days), because thanks to its high antioxidant content, it's perfect for colder autumn days.
- 1/2 skinless duck breast (approx. 90g)
- 1 teaspoon of soy sauce
- A pinch of salt
- A pinch of pepper
- 1 clove of garlic
- 1 teaspoon of honey
- 1 liter of water
- 1/2 carrot
- 1/2 onion
- 1 clove of garlic
- 4 slices of ginger
- 4 dried shiitake mushrooms (soaked for about 30 minutes in warm water beforehand)
- 1 tablespoon of soy sauce
- 1 teaspoon of miso paste
- A pinch of pepper and salt
- A few cloves (optional)
- 1 teaspoon sesame oil
- 1 egg
- 1 teaspoon sesame seeds (for sprinkling)
- A few mung bean sprouts (approx. 15g)
- 1 teaspoon of chives
- 2 sprigs of parsley/cilantro
- A few basil leaves
- 1 slice of lime
- 5 slices of chili pepper
Put all the ingredients, except for the miso paste, soy sauce, and sesame oil, into a large pot. Cook over low heat for at least 1.5 hours—the longer, the better. After cooking, strain the broth and remove the vegetables. In a bowl, mix the miso paste with a little hot broth, then pour it back into the pot. Add sesame oil and season to taste with soy sauce.
Clean the duck breast. Rub with salt, pepper, garlic, soy sauce, and honey. Place the duck in a cold, dry frying pan and fry over medium heat until browned and the fat has melted (about 6–8 minutes). Turn it over and fry for another 2–3 minutes on the other side. Then place it in an oven preheated to 180°C for 7–10 minutes (for medium doneness). Set aside for 5 minutes and cut into thin slices.
Cook until al dente (approx. 6–7 minutes after boiling). Rinse with cold water and peel.
Prepare the remaining ingredients: Prepare the mushrooms (from the broth), or fry them in a pan with a little soy sauce. Chop the chives and pepper. Rinse and dry the basil and parsley/cilantro.
Pour the hot broth into a bowl. Arrange the duck slices, egg halves, shiitake mushrooms, chopped chives, mung bean sprouts, parsley sprigs, lime slice, basil leaves, and chili pepper slices on top, and sprinkle everything with sesame seeds.
